Farm Fare: Maple Glazed Corned Beef
The lunch buffet featuring corned beef is one of the most popular meals at East Hill Farm. When Mark is serving up this delicious meat, he is often asked how he prepares it and what the secret is to this famous dish.
It is quite simple. There are only a few steps and you may have most of the ingredients around your kitchen. Guests are always amazed when they are told that we complete the boiling process in large pans in the oven. Because we cook such a large amount of meat, it is more efficient to boil it in the oven.
Ingredients:
6 lb. corned beef brisket
Glaze:
½ C ketchup
¼ C mustard
¼ C maple syrup
¼ C brown sugar
Directions:
Boil the corned beef for 2½ hours in enough water to cover the meat.
Remove from water and place on a broiler rack in a pan.
Mix above ingredients to make glaze. Brush beef with glaze.
Bake in the oven for 30 minutes at 400°.
