Farm Fare: Chicken Cordon Bleu Soup

Chicken Cordon Bleu Soup from East Hill FarmFall is in full swing on the farm. With the bright fall colors behind us we are busy preparing for the months ahead. Brisk days and cool nights are the perfect time to enjoy a steaming bowl of soup. We are sharing one of our farm favorites with you in hopes that it will become one of your comfort foods this season.

Gather Your Ingredients:
8 C  water
1/2 lb cooked chicken cubed
1/2 lb ham cubed
2T chicken base
1/2t granulated garlic
1/2t herb seasoning
1/2t black pepper
2C light cream
1/2 lb Swiss cheese cubed

Roux Ingredients:
1C melted margarine
1C flour

Bring water to a boil in a heavy sauce pan. Add all ingredients except the light cream and the Swiss cheese. Simmer for 30-45 minutes, stirring occasionally. Mix your roux and add to the soup along with the light cream. Bring the soup back to a simmer and stir, watching to be sure it does not burn. (You may want to use a double boiler at this point if you have one.) When you are ready to serve, add the cheese. Stir until blended and serve!

    Any Cheesy Casserole with chicken in it. Also Pot Pies (turkey, chicken or beef).
